Chicken Breast Chunks With Mushrooms And Lemon
- 1 whole chicken breast, skinned and deboned
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 2 Tbsp. olive or vegetable oil
- 1 clove garlic, crushed
- 1/2 lemon, cut into thin slices with rind
- 6 fresh mushrooms, quartered
- 1/4 c. dry white wine
- 1/4 tsp. oregano
- 1 tsp. fresh, chopped parsley
- 1/2 tsp. salt
- 1/4 tsp. pepper
- Cut chicken into bite size chunks and season with salt and pepper.
- Heat oil in skillet; add chicken and brown all over.
- Add garlic and saute 5 minutes over medium heat.
- Turn chicken pieces over.
- Add lemon slices, mushrooms, wine, oregano and parsley. Season lightly with salt and pepper.
- Cook chicken over low heat, partially covered, for 10 minutes.
- Serve with favorite vegetable.
