Thai Peanut Cabbage Salad
- 1/4 cups Rice Wine Vinegar
- 1/4 cups Canola Oil
- 1/4 cups Peanut Butter
- 2 Tablespoons Sugar
- 1 package Oriental Flavored Ramen Noodle Soup Mix, 3 Ounce Packet (including The Spice Pack), Divided Use
- 2 cups Shredded Green Cabbage
- 2 cups Shredded Red Cabbage
- 1 cup Shredded Carrot
- 1/3 cups Chopped Cilantro
- 1/3 cups Sliced Green Onion
- 1/2 cups Chopped Peanuts
- In a medium sized bowl combine the rice vinegar, canola oil, peanut butter, sugar and the little packet of soup mix seasoning. Beat well with a whisk and set aside.
- Break the ramen noodles into small pieces in a separate large bowl. Add the cabbage, carrots, cilantro and green onion and combine. Add the dressing and toss. Sprinkle with peanuts.
- You can serve immediately and the noodles will be crunchy, or make ahead of time and the noodles will soften slightly. Either way is delicious!
