Garden Spiral Salad
- 12 oz. pasta spirals
- 1/2 c. hard salami, cut into strips
- 1/2 c. pepperoni, cut into small pieces
- 1 c. cucumber, peeled and coarsely chopped
- 1/3 c. green pepper, coarsely chopped
- 1/3 c. thinly sliced red onion rings
- 2 tomatoes, peeled and chopped
- 1 Tbsp. fresh parsley, chopped
- 1/2 c. Provolone cheese, cubed
- 1/3 c. black olives, sliced
- 1/2 to 3/4 c. Italian herb salad dressing
- salt and pepper to taste
- Cook pasta spirals in 4 quarts of boiling water (salt if desired) for 9 to 11 minutes or until tender.
- Drain and rinse with cold water to cool.
- Combine the remaining ingredients, except for the Italian dressing, and chill.
- When ready to serve, toss the salad mixture with the Italian dressing.
- Add salt and pepper to taste.
- Serves 6 to 8.
