Copycat Cosmic Brownies
- FOR THE BROWNIES:
- 10 Tablespoons Unsalted Butter
- 1 cup Granulated Sugar
- 1/2 cups Light Brown Sugar
- 3/4 cups Unsweetened Cocoa Powder
- 1 teaspoon Vanilla
- 2 whole Eggs
- 1 whole Egg Yolk
- 2/3 cups All-purpose Flour
- 1/4 teaspoons Salt
- FOR THE GANACHE:
- 1-1/2 cup Semi-Sweet Chocolate Chips
- 1/2 cups Heavy Cream
- Rainbow Sprinkles, For Garnish
- For the brownies:
- Preheat oven to 350u0b0F. Line a 9 x 9 or 8 x 8 pan with aluminum foil. Lightly spray with cooking spray or grease with butter. Set aside.
- Melt butter in a microwave safe bowl until melted (about 1 minute). Allow butter to cool slightly. Stir in both sugars, cocoa, vanilla, egg, and egg yolk until combined. Fold in flour and salt.
- Pour batter into the prepared pan and bake for 25 minutes. Cool completely.
- For the ganache:
- Add chocolate chips and heavy cream to a medium microwave safe bowl. Heat in 15-second intervals until fully melted.
- Allow the ganache to cool for about 2-3 minutes. Pour and spread ontop of the cooled brownies. Place back into the fridge to allow the ganache to set.
- Serve with rainbow sprinkles on top!
