Thanksgiving Side Salad
- FOR THE DRESSING:
- 2 Tablespoons Grated Yellow Onion
- 3 Tablespoons Cider Vinegar
- 1-1/2 Tablespoon Winterized Olive Oil
- 2 teaspoons Dijon Mustard
- 1/4 teaspoons Salt
- Fresh Ground Black Pepper
- FOR THE SALAD:
- 1 whole Large Apple Of Your Choice, Washed, Cored Then Julienned
- 5 cups Baby Spinach Leaves, Stemmed
- 1/2 cups Pecan Halves
- 1/3 cups Grated Sharp White Cheddar Cheese
- Combine all dressing ingredients in a large jar, put the lid on and shake to mix. Add the apple slices into the jar and place in the refrigerator for one hour.
- In a large serving bowl toss spinach with dressing and apples, then top with pecans and grated cheese. Serve immediately.
