Thai Chili Garlic Quinoa Muffins
- 3 cups Cooked Red Quinoa
- 1/2 cups Whole Wheat Panko Crumbs
- 1/3 cups Three-cheese Grated Cheese Blend
- 3 stalks Green Onions
- 1 Large Egg
- 2 Tablespoons Thai Chili Garlic Paste
- 2 cloves Garlic
- 1 Tablespoon Chopped Fresh Parsley
- 1 Tablespoon Chopped Fresh Cilantro
- Preheat oven to 350u0b0F. Spray a muffin tin (12 muffins cups) with cooking spray and set aside.
- In a large bowl, mix all ingredients well. You will end up with a sticky mix that will maintain its shape when molded into a ball. Divide into 12 portions and shape into balls, pressing firmly.
- Place each portion into each muffin cup, using your fingers to pack it in well until it is filled to the top.
- Bake 25 minutes, keeping an eye on them so they do not brown too much. When done, remove from oven and let cool in the pan 5 minutes. Remove from muffin tin and serve.
