Warm Asparagus Spinach Salad
- 1 lb. fresh asparagus, cut into 1-inch pieces
- 2 Tbsp. plus 1/2 c. olive oil
- 1/4 tsp. salt
- 1/2 lb. penne pasta
- 1/2 c. diced onions
- 6 Tbsp. white wine vinegar
- 2 Tbsp. soy sauce
- 8 oz. fresh baby spinach
- 3/4 c. cashews or almonds
- 1/2 c. fresh Parmesan cheese
- Place asparagus in a baking dish. Drizzle with 2 tablespoons olive oil. Sprinkle 1/4 teaspoon salt. Bake, uncovered, at 400u0b0 for 20 to 25 minutes or until tender. Cook pasta according to package directions and drain. Combine onions, vinegar and soy sauce in blender. Gradually add 1/2 cup olive oil. Pour dressing over spinach, pasta and asparagus. Sprinkle cashews and Parmesan cheese on top. Serve immediately.
