Southern Pork Chops
- 8 loin pork chops (fat removed)
- 5 Tbsp. fat or oil
- 6 Tbsp. flour
- 3 c. chicken broth
- salt and pepper to taste
- 1/4 to 1/2 tsp. sage, if desired
- 1/2 c. brown sugar or to taste
- 3 Tbsp. vinegar or to taste
- 4 red skinned tart apples (Jonathan are good), cut in half crosswise
- 2 peeled medium to large onions, cut into 4 slices
- 1/2 to 1 c. golden raisins
- Brown chops in a little oil or margarine.
- Remove from skillet and render the cut off fat or use oil to make gravy with flour and broth (may be part water).
- Season with salt and pepper.
- Add sage, brown sugar and vinegar to taste.
- Place chops in a shallow baking pan.
- Top with onion slice and apple half which has been cored. Stuff cores with raisins and scatter some about.
- Pour gravy over all.
- Bake, uncovered, at 325u0b0 for 45 minutes.
- Add liquid, if necessary, and bake for 45 minutes more, covered.
- Makes 8 servings.
