Straight From The Orchard Apple Cake
- FOR THE CAKE:
- 2 whole Eggs
- 2 cups Sugar
- 1/2 cups Oil
- 1 teaspoon Vanilla
- 2 cups Flour
- 1/2 teaspoons Salt
- 1 teaspoon Baking Soda
- 2 teaspoons Cinnamon
- 1/4 teaspoons Nutmeg
- 4 cups Diced Apples
- 1 cup Chopped Walnuts
- FOR THE FROSTING:
- 3 ounces, fluid Cream Cheese (Room Temperature)
- 3 Tablespoons Butter (Room Temperature)
- 1 pinch Salt
- 1/2 teaspoons Vanilla
- 1-1/2 cup Powdered Sugar
- 1 dash Apple Juice
- Beat the eggs and gradually add sugar, oil, and vanilla. Sift dry ingredients together and add to egg mixture. Stir in apples and walnuts (I have to leave out the walnuts because my husband won't eat them, but it is good either way).
- Bake at 350 degrees for 45 minutes (check with a toothpick to see if it is done).
- Mix the frosting ingredients together. Frost cake when cool.
