Perfect Chocolate Cake
- 1-3/4 cup Flour, All Purpose
- 3/4 cups Cocoa
- 2 cups White Sugar
- 1-1/2 teaspoon Baking Soda
- 1-1/2 teaspoon Baking Powder
- 2 whole Eggs
- 1 cup Milk
- 1/2 cups Vegetable Oil
- 2 teaspoons Vanilla
- 1 cup Boiling Water
- FOR THE ICING:
- 1/2 cups Butter, Softened
- 2 cups Icing Sugar
- 1 teaspoon Vanilla
- 4 Tablespoons Cocoa
- 1 whole Egg
- Beat all ingredients except boiling water in a mixer for 2 minutes. Slowly mix in the boiling water and beat until combined. Batter will seem thin. Pour into greased and floured cake pan and bake for 50 to 60 minutes at 350F. I like to use a deep tube pan, but you can use layer pans or even an oblong pan. If using layer pans, you will need to adjust the baking time to probably 35 to 45 minutes. Test for doneness with a toothpick or cake tester (should come out clean).
- To make icing, cream butter. Add icing sugar, vanilla, and cocoa; beat well. Add egg and beat well.
- Let cake cool completely before icing.
