Mississippi River Catfish Gumbo(Serves 4 To 6)
- 1/4 c. vegetable oil
- 1/2 c. chopped green bell pepper
- 1/2 c. chopped onions
- 1/2 c. chopped celery
- 2 cloves garlic, minced
- 1 tsp. brown sugar
- 2 c. fish stock
- 4 to 5 firm ripe tomatoes, cut in wedges or 14 1/2 oz. can tomato wedges
- 2 c. sliced, fresh okra
- 2 tsp. salt
- 1/4 tsp. thyme
- 1 Tbsp. lemon juice
- 1 bay leaf
- Tabasco sauce to taste
- 1 lb. catfish fillets, cut in 1-inch pieces
- 2 tsp. file powder
- 3 c. cooked rice
