Sausage-Lentil Soup
- 8 oz. hot Italian turkey sausage
- 4 c. chicken broth
- 4 c. water
- 1 lb. dried lentils, sorted and rinsed (2 1/2 c.)
- 1 (14 1/2 oz.) can Italian-style diced tomatoes
- 1 c. chopped onions
- 2 tsp. minced garlic
- 1/2 c. small tube pasta
- 1 bunch fresh spinach, chopped
- Cook sausage in 1 cup water, breaking up as it cooks.
- Drain. Add broth, water, lentils, tomatoes, onions and garlic.
- Cover and bring to a boil over high heat.
- Reduce heat to low and simmer 45 minutes, stirring occasionally, until lentils are almost tender. Stir in pasta.
- Cook 8 to 10 minutes until lentils and pasta are tender.
- Stir in spinach and cook 2 to 3 minutes longer, until tender.
- Serve hot sprinkled with Parmesan cheese.
