Springerles
- 5 whole Eggs, Separated
- 4 Tablespoons Melted Butter
- 1/4 teaspoons Anise Oil
- 1 pound Powdered Sugar
- 3-1/2 cups Cake Flour
- 1/4 teaspoons Salt
- 1/2 teaspoons Baking Powder
- Separate the eggs, and in a large mixing bowl, beat the egg whites until stiff.
- Beat the yolks with a fork and add them into the whites.
- Add the melted butter and anise oil to the egg mixture and beat for about a minute.
- Slowly incorporate the powdered sugar into the egg mixture and beat until mixed.
- In a separate bowl, mix together the flour, salt and baking powder.
- Fold the flour mixture into the egg mixture until fully incorporated. Chill for 2 hours.
- Roll out dough on a heavily-floured surface to 1/4" to 1/2" thickness.
- Roll prints or press with a Springerle board if available, then cut along the lines. If you don't have a Springerle board or pin, cut into 2.5" squares.
- Place squares on parchment-lined baking sheets and let sit uncovered overnight.
- Bake at 350F for 7 to 10 minutes.
