Springerles

  1. Separate the eggs, and in a large mixing bowl, beat the egg whites until stiff.
  2. Beat the yolks with a fork and add them into the whites.
  3. Add the melted butter and anise oil to the egg mixture and beat for about a minute.
  4. Slowly incorporate the powdered sugar into the egg mixture and beat until mixed.
  5. In a separate bowl, mix together the flour, salt and baking powder.
  6. Fold the flour mixture into the egg mixture until fully incorporated. Chill for 2 hours.
  7. Roll out dough on a heavily-floured surface to 1/4" to 1/2" thickness.
  8. Roll prints or press with a Springerle board if available, then cut along the lines. If you don't have a Springerle board or pin, cut into 2.5" squares.
  9. Place squares on parchment-lined baking sheets and let sit uncovered overnight.
  10. Bake at 350F for 7 to 10 minutes.
