Zucchini Lasagna
- 4 c. tomato sauce
- 1/4 tsp. garlic powder
- 1 tsp. salt
- dash of pepper
- 1 lb. hamburger
- 1/4 c. chopped onions
- 3 medium zucchini, sliced
- 8 oz. imitation sour cream
- 8 oz. lo-cal cottage cheese
- 1 (2 1/2 oz.) can black olives
- 1 c. grated cheese
- Simmer tomato sauce with seasonings; in separate frying pan, saute hamburger and onions until meat is brown.
- Add tomato sauce and simmer for 15 minutes.
- Line bottom of 9 x 13-inch baking pan with half the zucchini slices.
- Cover with half of meat mixture. Spoon on half of sour cream and cottage cheese.
- Sprinkle with olives.
- Repeat layering process with remaining half portion.
- Top with grated cheese.
- Cover with foil and bake at 350u0b0 for 35 minutes; remove foil (save) and bake for 10 minutes more to brown cheese.
- Remove from oven, re-cover with foil and allow to stand for 15 minutes until layers are set.
- Makes 12 servings.
