Hot Italian Sausage Stew
- 16 ounces, weight Hot Italian Sausage In Casing, Cut Into 2-inch Pieces
- Olive Oil, As Needed
- 1 whole White Onion, Sliced
- 1 whole Bell Pepper, Sliced
- 1 can (22 Oz. Size) San Marzano Tomatoes
- 2 dashes Worcestershire Sauce
- Salt And Black Pepper To Taste
- 1 teaspoon Ground Oregano
- 1 teaspoon Ground Basil
- 1/2 cups Low Sodium Vegetable Stock
- Grated Parmesan Cheese, Garnish
- Croutons Or Crackers, For Garnish (optional)
- In a large saute pan over medium heat, add sausage pieces and a drizzle or two of olive oil. Cook until no longer pink, about 7 minutes. Add onions and peppers and cook 3-4 minutes to soften. Transfer to a stock pot or Dutch oven (with a lid).
- Add tomatoes, Worcestershire sauce, seasonings, and vegetable stock. Stir to combine. Cover with a lid and cook over medium heat for 15 minutes, stirring occasionally.
- Ladle into serving bowls. Serve piping hot with garnishes of your choice. We love sliced bread with this stew to soak up the wonderful juices. Enjoy!
