Cinnamon Doughnut Muffins
- FOR THE MUFFINS:
- 1/4 cups Butter
- 1/4 cups Vegetable Oil
- 1/2 cups Granulated Sugar
- 1/3 cups Brown Sugar
- 2 Large Eggs
- 5-1/2 teaspoons Baking Powder
- 1/4 teaspoons Baking Soda
- 1 teaspoon Ground Nutmeg
- 3/4 teaspoons Salt
- 1 teaspoon Vanilla
- 7-1/3 cups All-purpose Flour
- 1 cup Whole Milk
- FOR THE TOPPING:
- 1/2 cups Butter, Melted
- 1 cup Sugar
- 2 Tablespoons Ground Cinnamon
- Preheat the oven to 425u0b0F. Lightly grease a standard muffin tin.
- In a medium-sized mixing bowl, cream together the butter, vegetable oil and sugars till smooth. Add the eggs, beating to combine. Stir in the baking powder, baking soda, nutmeg, salt, and vanilla.
- Stir the flour into the butter mixture alternately with the milk, beginning and ending with the flour and making sure everything is thoroughly combined.
- Spoon the batter evenly into the prepared pan, filling the cups nearly full.
- Bake 15 to 17 minutes.
- For the topping: Put the butter into a medium sized bowl and melt it in the microwave. In another bowl combine the sugar and cinnamon.
- Remove muffins from the oven, and let them cool for a couple of minutes.
- Roll entire muffin in the melted butter then immediately roll it in the sugar mixture.
- Serve warm.
