The Super Pancake With Maple Yogurt Sauce

  1. In a medium-sized mixing bowl, combine flour, baking powder and sugar. In a smaller bowl whisk together olive oil, egg white and almond milk. Form a well in the center of the dry ingredients and add the wet mixture. Gently mix together until just combined. Whisk in the water as needed to adjust for consistency.
  2. Heat a large nonstick skillet (use one with a lid-you'll need it in a second) over medium heat. Reduce heat a tiny bit, then spoon 3 tablespoons of the batter onto skillet. Sprinkle with 1 tablespoon granola, 1/2 tablespoon pecans and 1 tablespoon chopped strawberries. Cover skillet and allow pancake to cook for about 5 minutes, until cooked through. You may need to adjust heat, depending on your range.
  3. Transfer pancake from skillet onto a plate and cover with a clean dishtowel to keep warm. Repeat with the remaining batter, granola, pecans and berries.
  4. For the yogurt sauce, whisk together yogurt and maple syrup.
  5. To serve, spoon 2 tablespoons of maple yogurt sauce over each pancake. Spend the rest of your morning doing high energy activities and notice the difference in your energy!
