Grandma Ella Mae’S Lemon Cake
- 1 box Yellow Cake Mix
- 1 box 3.5oz. Lemon Jello Pudding Mix
- 4 whole Eggs
- 1/2 cups Canola Oil
- 1/2 cups Water
- 3/4 cups Orange Juice
- 1 teaspoon Almond Extract
- 1-1/2 cup Powdered Sugar
- Juice Of 2 Lemons
- Preheat oven to 350 F.
- Grease and flour a 13x9 pan.
- Mix together the cake mix, jello, eggs, oil, water, OJ and almond extract. Beat on medium for 4 minutes. Pour into prepared pan.
- Bake for 35 minutes, or until an inserted fork comes out clean.
- Meanwhile, mix together the powdered sugar and juice of lemons to make the icing. Add more orange juice if needed.
- Once cake is out of oven, pierce top of cake with fork to make holes for the icing to seep through. Pour icing over top and spread.
- Let cool and dive in.
