My Sister’S Balsamic Chicken Apple Salad
- 2 heads Romaine Lettuce, Chopped
- 1/2 whole Red Onion, Finely Chopped
- 1/2 cups Casa Fresca Cheese (Mexican Hard Cheese, Panela Or Cotija)
- 1/2 whole Cooked Rotissere Chicken Cut Up
- 2 whole Small Granny Smith Apples, Chopped
- 1/3 cups Pine Nuts
- 1/4 cups Olive Oil
- 1/4 teaspoons Minced Garlic
- 1/4 cups Balsamic Vinegar
- 1/4 teaspoons Dijon Mustard
- 1 pinch Oregano
- To prepare the salad, chop the Romaine lettuce, apples, and onion. Add to your salad bowl.
- On top of that, add crumbled cheese and pine nuts.
- Prepare the salad dressing by combining oil, balsamic vinegar, oregano, garlic, and Dijon mustard in a jar with a lid. Shake to mix. Add salt and pepper to taste.
- This salad will feed 4 people easily, but if you are like me and my sister, it will feed two. Add a bottle of your favorite white wine, and voila! The perfect light meal.
- Please note: This salad can be prepared with fresh homemade balsamic dressing or with your favorite bottle of balsamic vinaigrette.
