These Ain’T Yo Daddy’S Potatoes
- 6 pounds Potatoes
- 2 Tablespoons Fresh Rosemary (reserve A Pinch For Garnish)
- 3 Tablespoons Balsamic Vinegar
- 1-1/2 Tablespoon Olive Oil
- 1 teaspoon Sea Salt (or Kosher)
- 1/2 teaspoons Fresh Cracked Black Pepper
- 6 cloves Garlic, Minced (roasted Is Best)
- 1 cup Goat Cheese
- Cube the potatoes into a medium dice. (Whatever size will best fit into your mouth, I don't want to judge.) Place potatoes and the next six ingredients into a large plastic bag, tossing well to coat.
- Heat oven to 400 degrees. Spread the potatoes in a large jelly roll pan that you've coated with cooking spray.
- Roast in the oven for 45 minutes, or until potatoes are crispy and golden on the edges.
- Crumble the goat cheese and mix into the potatoes, garnish with the reserved pinch of fresh rosemary. Stand tall with the pride of a hero when people take the first bite.
