These Ain’T Yo Daddy’S Potatoes

  1. Cube the potatoes into a medium dice. (Whatever size will best fit into your mouth, I don't want to judge.) Place potatoes and the next six ingredients into a large plastic bag, tossing well to coat.
  2. Heat oven to 400 degrees. Spread the potatoes in a large jelly roll pan that you've coated with cooking spray.
  3. Roast in the oven for 45 minutes, or until potatoes are crispy and golden on the edges.
  4. Crumble the goat cheese and mix into the potatoes, garnish with the reserved pinch of fresh rosemary. Stand tall with the pride of a hero when people take the first bite.
