Texas Pecan Cake
- 1 lb. (real) butter
- 1 lb. brown sugar
- 6 eggs, separated
- 4 c. flour
- 1 lb. pecan meats
- 1 lb. candied cherries or 2 1/4 c.
- 1 Tbsp. baking powder
- 1 1/2 oz. bottle lemon extract
- 1 lb. candied pineapple
- Cream butter
- and
- sugar;
- addtell
- beaten egg yolks. Sift 3 cups
- flour with baking powder.
- Add to butter mixture. Add all oftemon
- extract.
- In
- separate
- bowl,
- mix pecans, cherries and pineapple.
- Sprinkle
- 1
- cup
- flour over and mix together. Beat egg
- whites until stiff.
- Fold in batter.
- Add fruit mixture last.
- Spoon
- mixture into tube pan.
- Let stand in refrigerator overnight. Bake at 250u0b0 for 3 hours, then 300u0b0 for 1 hour.tool thoroughly;
- then turn out.
