Texas Pecan Cake

  1. Cream butter
  2. and
  3. sugar;
  4. addtell
  5. beaten egg yolks. Sift 3 cups
  6. flour with baking powder.
  7. Add to butter mixture. Add all oftemon
  8. extract.
  9. In
  10. separate
  11. bowl,
  12. mix pecans, cherries and pineapple.
  13. Sprinkle
  14. 1
  15. cup
  16. flour over and mix together. Beat egg
  17. whites until stiff.
  18. Fold in batter.
  19. Add fruit mixture last.
  20. Spoon
  21. mixture into tube pan.
  22. Let stand in refrigerator overnight. Bake at 250u0b0 for 3 hours, then 300u0b0 for 1 hour.tool thoroughly;
  23. then turn out.
