Thin Mint Brownies
- 5-1/3 ounces, weight Unsalted Butter
- 1/2 pounds, 1 ounces, weight Sugar
- 2-7/8 ounces, weight Cocoa Powder
- 1 teaspoon Vanilla Extract
- 1 pinch Salt
- 2 whole Eggs
- 2-2/3 ounces, weight Whole Wheat Flour
- 1 cup Thin Mints Candies (like York Peppermint Patties Or Similar)
- 1. Preheat oven to 325u0b0F.
- 2. Line an 8x8 baking dish with baking paper or foil so that it overlaps and hangs over the sides or grease the heck out of the pan if you prefer.
- 3. Mix butter and sugar.
- 4. Add cocoa powder and mix until well combined.
- 5. Add vanilla, salt and eggs and mix well.
- 6. Gently fold in the flour until just combined.
- 7. Mix in the chopped thin mints.
- 8. Bake for 40-50 minutes. I used glass, and checked them at 40 minutes and they weren't quite set yet . They were definitely bordering on overdone by 50.
- 10. Cool in the pan then eat your heart out.
