Nanaimo Bars
- FOR THE BASE:
- 1/2 cups Butter
- 1/4 cups Sugar
- 5 Tablespoons Cocoa
- 1 teaspoon Vanilla
- 1 whole Egg
- 2 cups Crushed Graham Crackers
- 1 cup Coconut
- 1/2 cups Chopped Walnuts
- FOR THE ICING:
- 1/4 cups Butter
- 3 Tablespoons Milk
- 2 Tablespoons Vanilla Custard Powder
- 2 cups Icing Sugar
- FOR THE CHOCOLATE TOP:
- 4 whole Semi-sweet Chocolate Squares
- 1 Tablespoon Butter
- For the base:
- Place 1/2 cup butter, sugar, cocoa, vanilla and egg in a bowl. Set bowl in a dish of boiling water. Stir well until mixture resembles a thin custard. Add graham crackers, coconut and walnuts; mix well. Press mixture into an 8" square baking pan and spread with icing.
- For the icing:
- Cream 1/4 cup of butter. Mix milk and vanilla custard powder together, then add to butter. Blend in 2 cups of icing sugar. Spread over the base and put in refrigerator to harden.
- For the chocolate top:
- Melt 4 semi-sweet chocolate squares with 1 tablespoon butter and spread over icing. When set, cut into bars. I like to score the chocolate before it is completely set so that the chocolate doesn't crack when cutting up the bars.
- Keep refrigerated.
