Nanaimo Bars

  1. For the base:
  2. Place 1/2 cup butter, sugar, cocoa, vanilla and egg in a bowl. Set bowl in a dish of boiling water. Stir well until mixture resembles a thin custard. Add graham crackers, coconut and walnuts; mix well. Press mixture into an 8" square baking pan and spread with icing.
  3. For the icing:
  4. Cream 1/4 cup of butter. Mix milk and vanilla custard powder together, then add to butter. Blend in 2 cups of icing sugar. Spread over the base and put in refrigerator to harden.
  5. For the chocolate top:
  6. Melt 4 semi-sweet chocolate squares with 1 tablespoon butter and spread over icing. When set, cut into bars. I like to score the chocolate before it is completely set so that the chocolate doesn't crack when cutting up the bars.
  7. Keep refrigerated.
