Colorful Corn Salad

  1. Mix first 7 ingredients in a large bowl.
  2. In a separate bowl, whisk together the last 6 ingredients for the dressing. Pour dressing over the salad and mix together. Refrigerate an hour or more to let the flavors blend.
  3. This dish is great as a side salad, or can be used as a chunky salsa for hearty tortilla chips.
  4. Note: The serving size is only a guess.
