Colorful Corn Salad
- 1 bag Frozen Corn
- 1 can Black Beans, Rinsed Well
- 1/4 cups Diced Red Onion
- 1/2 cups Sliced Black Olives
- 1 whole Diced Red Pepper
- 1/4 cups Shredded Carrots
- 2 whole Chopped Green Onions
- FOR THE DRESSING:
- 1/2 cups Olive Or Canola Oil
- 1/2 cups Rice Vinegar
- Chili Powder, to taste
- Cumin, To Taste
- Oregano, to taste
- Salt And Pepper, to taste
- Mix first 7 ingredients in a large bowl.
- In a separate bowl, whisk together the last 6 ingredients for the dressing. Pour dressing over the salad and mix together. Refrigerate an hour or more to let the flavors blend.
- This dish is great as a side salad, or can be used as a chunky salsa for hearty tortilla chips.
- Note: The serving size is only a guess.
