Sugarless Applesauce Cake
- 1 cup Raisins
- 1 cup Dried Apples, Diced
- 2 cups Water
- 2 cups All-purpose Flour
- 1 teaspoon Baking Soda
- 1/2 teaspoons Salt
- 1/2 teaspoons Ground Nutmeg
- 1-1/2 teaspoon Cinnamon
- 2 whole Eggs, Beaten
- 1 cup Natural Applesauce
- 2 Tablespoons Liquid Sweetener
- 3/4 cups Vegetable Oil
- 1 teaspoon Vanilla
- 1/2 cups Chopped Nuts
- Combine raisins, dried apples, and water in a saucepan. Cook uncovered until water has evaporated and fruit is soft. Set aside.
- In a large bowl, combine flour, baking soda, salt, and spices. In another bowl, combine eggs, applesauce, sweetener, oil, and vanilla. Add nuts and fruit mixture. Mix well. Add dry indgredients and blend thoroughly. Pour into a 10-inch greased and floured bundt pan.
- Bake at 350 F for 35 to 40 minutes or until done.
