Easy Chocolate Cake!!
- 1 cup Self-Rising Flour
- 4 whole Eggs
- 3/4 cups Vegtable Oil (I Use Canola)
- 3/4 cups Sugar
- 1 cup Cocoa Mix (powder) (any Variety)
- 1 teaspoon Vanilla Extract (optional)
- 1 cup Heavy Whipping Cream, Divided
- 3-1/2 ounces, weight Bittersweet Chocolate, Broken Into Cubes (100g)
- 2 Tablespoons Powdered Sugar
- Heat oven to 170C (340F). Butter (I use cooking spray) a 9x13 baking dish.
- In a large bowl, mix flour, eggs, oil, sugar, cocoa mix, vanilla extract and 1/2 cup cream until blended. (I use a regular tablespoon to mix. Too lazy to use the Kitchen Aid for this one.)
- Pour into baking dish and bake for 30 to 45 minutes, until a toothpick comes out dry. PLEASE (pretty please) do not over-bake.
- Set aside to cool.
- In a glass bowl, pour in the remaining 1/2 cup of cream, powdered sugar and chocolate. Give them a little mix and pop into the microwave for about 30 to 40 seconds until you are able to melt the chocolate into the cream. Mix until combined and glossy. Pour over cooled cake. Let set. (I put in fridge, or just go for it!)
