Chocolate Oatmeal Cookies
- 1 1/4 c. margarine, softened
- 3/4 c. firmly packed brown sugar
- 1/2 c. granulated sugar
- 1 egg
- 1 tsp. vanilla
- 1 1/2 c. all-purpose flour
- 1 tsp. baking soda
- 1 tsp. salt (optional)
- 3 c. Quaker oats (quick or old-fashioned, uncooked)
- 1 (12 oz.) pkg. semi-sweet chocolate morsels
- 3/4 c. chopped nuts (optional)
- Heat oven to 375u0b0.
- Beat together margarine and sugars until light and fluffy.
- Add egg and vanilla; beat until well blended. Gradually add combined flour, baking soda and salt, mixing well. Stir in oats, chocolate morsels and nuts.
- Drop by rounded teaspoonfuls onto ungreased cookie sheet.
- Bake 9 to 11 minutes. Cool 1 minute on cookie sheet; remove to wire rack.
- Makes 6 dozen cookies.
