Blueberry French Toast Overnight Oats
- 1 cup Old Fashioned Oats
- 1 cup Blue Diamond Almond Breeze Almondmilk Original Unsweetened
- 1 cup Vanilla Greek Yogurt
- 1/2 teaspoons Cinnamon
- 1 dash Nutmeg
- 1/2 teaspoons Vanilla Extract
- 1 Tablespoon Maple Syrup
- 1 cup Fresh Blueberries
- Brown Sugar, To Taste (optional)
- In a small bowl, mix together oats, almond milk, yogurt, cinnamon, nutmeg, vanilla extract, and maple syrup. You can also stir in blueberries, if desired, or wait to use as a topping just before eating.
- Pour into a mason jar or airtight container with lid. Refrigerate for at least 4 hours, or preferably overnight, so that the oats will soften and absorb the liquid.
- Remove from refrigerator, stir, and top with blueberries and a sprinkling of brown sugar, if desired. Enjoy!
