Sweetcorn Fritters
- 1 can Corn Kernels
- 1 whole Egg
- 3 Tablespoons Flour
- 1/4 cups Grated Cheese
- 3 Tablespoons Chopped Fresh Herbs
- 2 cloves Garlic, Minced
- 1/4 teaspoons Crushed Red Pepper Flakes
- 1 piece Small Onion Or Shallot Minced
- 2 Tablespoons Olive Oil, For Frying
- 1 Tablespoon Butter, For Frying
- Drain corn and put in a large mixing bowl. Add flour, egg, and cheese. (I use whatever I have on hand, chedder parmesan, asiago or mozzarella all work well. The same goes for the herbs-you can use a variety of parsley, thyme or oregano.)
- Add the rest of the ingredients plus a pinch of salt and pepper and mix well. Moderately heat a nonstick frying pan; add a couple of tablespoons of olive oil and 1 tablespoon of butter, and scoop large spoonfuls of batter into pan.
- Gently pan fry until golden, about 3 minutes each side. Serve with eggs for breakfast or salad for lunch or dinner.
