Double Chocolate Mousse Pastries

  1. First take 1 sheet of the pastry (I used Pepperidge Farm Puff Pastry Sheets), unfold and cut into 3 at the lines, then cut each into 4 pieces. Bake on a lightly oiled cookie sheet for 15 minutes on 400 degrees.
  2. Mix chocolate, butter and 1/4 cup of water and melt in microwave or double boiler, about 5 minutes.
  3. In a small pot, whip 3 egg yolks, sugar and remaining 1/4 cup of water. Heat to 160 degrees, about 2 to 3 minutes. Remove from heat and let cool in ice water or freezer.
  4. Whip whipping cream and fold into cooled chocolate mixture.
  5. Cut pastry pieces in half and fill with mousse mixture. Melt the chocolate chips for topping, and drizzle on top of the pastries. Sprinkle powdered sugar. Add fruit on the side, and enjoy!
