Pork With Sweet Peppers
- 1 lb. center-cut pork chops
- 1/4 c. flour
- 1/2 tsp. thyme
- 1/8 tsp. pepper
- cooking spray
- 3 small bell peppers (red, green and/or yellow), sliced
- 2 tsp. chopped scallions
- 1 clove garlic, mashed
- 1/4 c. beef stock
- 1/2 tsp. rosemary
- 1 tsp. cornstarch
- Mix together the flour, thyme and black pepper.
- Remove bones and excess fat from chops.
- Dredge in flour mixture.
- Spray frying pan and heat until hot.
- Brown pork and remove to a warm platter. Drain excess fat from pan.
- Add peppers, scallions and garlic. Stir-fry 2 minutes.
- Combine beef stock, cornstarch and rosemary. Add to skillet.
- Bring to a boil.
- Reduce heat and cook just until thick.
- Pour over pork.
