Pork With Sweet Peppers

  1. Mix together the flour, thyme and black pepper.
  2. Remove bones and excess fat from chops.
  3. Dredge in flour mixture.
  4. Spray frying pan and heat until hot.
  5. Brown pork and remove to a warm platter. Drain excess fat from pan.
  6. Add peppers, scallions and garlic. Stir-fry 2 minutes.
  7. Combine beef stock, cornstarch and rosemary. Add to skillet.
  8. Bring to a boil.
  9. Reduce heat and cook just until thick.
  10. Pour over pork.
