Key Lime Shortbread Cookie
- 1/3 cups Coconut Sugar
- 7 Tablespoons Butter
- 3 Limes, Zested
- 3/4 cups Spelt Flour
- 3 Tablespoons All-purpose Flour
- 1/3 cups Arrowroot Starch
- 1 Tablespoon Key Lime Juice
- If you're using coconut sugar, grind it in a coffee or spice grinder to get it into a fine powder. Beat sugar, butter, and lime zest together. Add spelt flour, all-purpose flour, arrowroot starch, and lime juice. If your dough is too soft, add 1 tablespoon of all-purpose flour at a time until crumbly.
- Roll dough into a ball and chill for 30 minutes. Preheat oven to 350u0b0F.
- Roll out dough to 1/2 to 3/4 inch thickness. Cut out cookies and place on lined baking sheet. Bake for 10-15 minutes. Cool on a wire rack and enjoy!
- Notes: If you do not have spelt flour, just substitute more all-purpose flour.
