Seafood Vera Cruz
- 4 fish fillets (flounder, cod, etc.)
- 4 peeled, chopped tomatoes (can use canned)
- 1 large diced onion
- 1 julienned green pepper
- 2 Tbsp. tomato paste
- 1 Tbsp. minced garlic
- 2 Tbsp. capers
- 1 Tbsp. chopped parsley
- sliced black olives
- olive oil
- salt and pepper
- 2 Tbsp. Worcestershire sauce
- juice of 1 lemon
- Place fish fillets in Pyrex dish; salt and pepper to taste. Add lemon juice and Worcestershire sauce; allow to marinate while preparing vegetables.
- Saute onion in olive oil until golden.
- Add tomatoes, pepper, garlic, capers, black olives, tomato paste and chopped parsley.
- Cover; cook for 10 minutes.
- Top fish with this mixture.
- Bake at 350u0b0 for 10 minutes per inch of thickness of fish.
