Two-Potato Bake

  1. Coat an 11 x 7 x 2-inch baking dish with cooking spray.
  2. Layer 2 cups sweet potatoes in half of dish; layer 2 cups red potatoes in other half.
  3. Sprinkle with onion.
  4. Drizzle with half of margarine.
  5. Sprinkle with half of salt and pepper.
  6. Repeat with remaining ingredients.
  7. Bring milk to a boil; pour over.
  8. Cover with foil.
  9. Cut 8 slits in foil.
  10. Bake at 425u0b0 for 30 minutes. Uncover and bake 10 minutes.
  11. Remove from oven.
  12. Sprinkle with parsley and cheese.
  13. Let stand 5 minutes before serving.
