Blueberry Muffins
- 1-1/2 cup Flour
- 1/2 teaspoons Salt
- 2 teaspoons Baking Powder
- 1/2 teaspoons Cinnamon
- 1/8 teaspoons Nutmeg
- 2 whole Eggs
- 2 Tablespoons Raw Honey
- 1 teaspoon Vanilla
- 1/4 cups Oil
- 3/4 cups Orange Juice
- 1 cup Blueberries
- Preheat oven to 400u0b0F.
- Mix dry ingredients together (flour, salt, baking powder, cinnamon nutmeg). Pour in wet ingredients and lightly stir a few times, just until mixed. Add blueberries and very lightly mix.
- Fill muffin tin with liners, or grease a muffin tin if you don't have liners. Fill each liner 3/4 full. Add additional blueberries if desired.
- Bake for 12-15 minutes, until an inserted toothpick comes out clean.
- Notes:
- 1. Be very careful not to over-mix the batter! Mix as little as possible, even if you think it's not enough. Muffins will come out doughy and undercooked if mixed too much.
- 2. I like to add in extra blueberries to each muffin after I fill the muffin tins.
