Oriental Chicken And Peanuts
- 1/2 c. peanuts
- 2 stalks celery, chopped
- 1 small yellow onion, chopped
- 2 cloves garlic, crushed
- 1 lb. chicken breasts, chopped into 1 inch strips
- 1 Tbsp. peanut oil
- 2 c. chicken broth
- 1 tsp. cornstarch
- 2 Tbsp. low-salt soy sauce
- Combine 1 3/4 cups broth, cornstarch and soy sauce and set aside.
- Saute onion and garlic in oil, either in a wok or saucepan for 3 to 4 minutes.
- Add 1/4 cup chicken broth.
- Add chicken and stir-fry until chicken is cooked through.
- (You may need to add a little more chicken broth if mixture is dry.)
- Add celery and peanuts and broth/cornstarch/soy sauce mixture.
- Cover and allow to simmer until thickens, about 3 minutes.
- Serve over rice or noodles.
