Oriental Chicken And Peanuts

  1. Combine 1 3/4 cups broth, cornstarch and soy sauce and set aside.
  2. Saute onion and garlic in oil, either in a wok or saucepan for 3 to 4 minutes.
  3. Add 1/4 cup chicken broth.
  4. Add chicken and stir-fry until chicken is cooked through.
  5. (You may need to add a little more chicken broth if mixture is dry.)
  6. Add celery and peanuts and broth/cornstarch/soy sauce mixture.
  7. Cover and allow to simmer until thickens, about 3 minutes.
  8. Serve over rice or noodles.
