Herbed Baked Halibut
- 4 (5 oz.) fresh halibut or scrod fillets
- juice of 1/2 lemon or lime
- 1 tsp. crushed Italian herb seasoning
- freshly ground pepper
- 1 (8 oz.) can salt-free tomato sauce
- 1 small onion, chopped
- 1/2 c. chopped celery
- 1 green pepper, chopped
- 2 ripe plum tomatoes, chopped
- 6 fresh mushrooms, sliced
- Sprinkle fillets with lemon juice, herb seasoning and pepper. Marinate 10 to 20 minutes.
- Pour a bit of tomato sauce in the bottom of a small, shallow baking dish.
- Lay fish on top of sauce and bake in upper third of a preheated 375u0b0 oven for 10 minutes. Layer top of fish with onion, celery, green pepper, tomatoes and mushrooms.
- Pour remaining tomato sauce over vegetables and bake at 375u0b0 for 20 to 25 minutes or until fish flakes.
- If you like, the fish may be prepared and served directly in individual baking dishes.
- Yield:
- 4 servings.
