Oatmeal Cake
- FOR THE CAKE:
- 1-1/4 cup Boiling Water
- 1/2 cups Butter
- 1 cup Oatmeal (quick Cooking)
- 1 cup Sugar
- 1 cup Brown Sugar, Packed
- 1 teaspoon Vanilla
- 2 whole Eggs
- 1-1/2 cup Flour
- 1 teaspoon Baking Soda
- 1/2 teaspoons Salt
- 3/4 teaspoons Cinnamon
- FOR SAUCE
- 1/4 cups Butter
- 1/2 cups Packed Brown Sugar
- 3 Tablespoons Cream
- Melt butter in boiling water. Add oatmeal. Stir, cover and allow to sit for 20 minutes. After 20 minutes, add the remaining cake ingredients to the oatmeal mixture and mix well. Pour into a 9" greased pan. Bake at 350F for 50-55 minutes. About 10 minutes before cake is done, combine 1/4 cup butter, 1/2 cup packed brown sugar and 3 tablespoons of cream. Bring ingredients to a boil. Boil while constantly stirring for 2 minutes. Pour sauce over hot cake.
