Tomato Mini Mozzarella Salad
- 1 pint Grape Tomatoes, Washed
- 1 package (8 Oz. Package) Mozzarella Pearls
- 1/2 whole Sweet Onion, Diced
- 1 clove Garlic, Minced
- 2 Tablespoons Olive Oil; Best You Can Afford
- 2 Tablespoons Aged Balsamic Vinegar
- 1/4 teaspoons Cracked Sea Salt
- 1/2 teaspoons Cracked Pepper
- 1/2 ounces, weight Fresh Basil Leaves, Chiffonade
- In a large bowl, put the cleaned grape tomatoes, mozzarella pearls, diced sweet onion and minced garlic. Gently stir to combine ingredients. Drizzle the olive oil and balsamic vinegar over the salad. Gently stir to coat. Add cracked pepper, salt and basil. Gently stir to blend.
- Serve as an appetizer, first course for 4, a side dish with grilled fish or meat or as a light main meal with good crusty bread and a nice Pinot Grigio.
