Marinated Pork Tenderloin
- 1 teaspoon Fennel Seeds
- 1 teaspoon Cumin Seeds
- 1 teaspoon Thyme
- 3 cloves Garlic
- 2 teaspoons Smoked Paprika
- 2 whole Limes, Zest And Juice
- 1 Tablespoon Tomato Ketchup
- 1 Tablespoon Honey
- 2 Tablespoons Balsamic Glaze
- 2 pinches Salt And Pepper
- 1 whole Filet Pork Tenderloin
- Place fennel, cumin and thyme into pestle and mortar. Add garlic cloves and pound until crushed. Add smoked paprika, lime zest and lime juice. Stir.
- Combine with ketchup, honey and balsamic glaze and stir to fully combine. Season with salt and pepper.
- Spoon 2/3 of the marinade onto the pork. With your hands, rub marinade all over the pork and put in the fridge to marinate overnight.
- When ready to cook, preheat oven to 180u0b0C (355u0b0F).
- Place pork onto a baking tray. Spoon on the rest of the marinade over the pork and put in the oven. Cook for 45-60 minutes or until pork is fully cooked.
