Marinated Pork Tenderloin

  1. Place fennel, cumin and thyme into pestle and mortar. Add garlic cloves and pound until crushed. Add smoked paprika, lime zest and lime juice. Stir.
  2. Combine with ketchup, honey and balsamic glaze and stir to fully combine. Season with salt and pepper.
  3. Spoon 2/3 of the marinade onto the pork. With your hands, rub marinade all over the pork and put in the fridge to marinate overnight.
  4. When ready to cook, preheat oven to 180u0b0C (355u0b0F).
  5. Place pork onto a baking tray. Spoon on the rest of the marinade over the pork and put in the oven. Cook for 45-60 minutes or until pork is fully cooked.
