Whoppie Pies

  1. Preheat oven to 425u0b0.
  2. Combine flour, cocoa, baking soda and salt in small bowl.
  3. With electric mixer on medium speed, beat sugar, shortening and egg white in a medium bowl until fluffy and well blended, about 2 minutes.
  4. Stir in flour mixture.
  5. Add milk until just blended.
  6. Drop dough by spoonfuls onto ungreased cookie sheet.
  7. Bake until top springs back when lightly touched (5-7 minutes).
  8. Cool.
  9. Spoon 2 tsp. of marshmallow creme on the bottom half of the cookie sandwich.
  10. Store in air tight container up to 3 days. Serves 12.
