Greek Honey And Walnut Balls (Loukoumades)

  1. Combine 4 1/2 cups flour with salt in a large bowl. In 1/2 cups warm water, dissolve yeast, 1 tablespoon honey, and remaining 1 tablespoon flour.
  2. In the center of the flour, make a well and pour in yeast, honey, and flour mixture. Add remaining 1 3/4 cups water. Mix with a spatula until batter is loose and sticky. If batter is not loose, add more water to achieve it. Cover with plastic wrap and leave to rise for a couple of hours.
  3. Heat a pot filled about half full of the vegetable oil to 375u0b0F (180u0b0C).
  4. Shape loukoumades by oiling hands, taking a handful of batter and clenching your fist around it. Now squeeze out a knob of the batter between the fingers and drop it into the hot oil. Repeat with all the remaining batter.
  5. When the balls rise to the top, they are ready. Remove them with a slotted spoon and dry on paper towels.
  6. Drizzle with some honey. Top with cinnamon and walnuts.
