Greek Honey And Walnut Balls (Loukoumades)
- 4-1/2 cups All-purpose Flour, Plus 1 Tablespoon, Divided
- 1 teaspoon Salt
- 2-1/4 cups Warm Water, divided
- 1 Tablespoon Instant Dry Yeast
- 1 Tablespoon Honey, Plus 1 Cup For Drizzling
- Vegetable Oil, For Frying
- Ground Cinnamon, For Sprinkling
- Coarsely Ground Walnuts, For Sprinkling
- Combine 4 1/2 cups flour with salt in a large bowl. In 1/2 cups warm water, dissolve yeast, 1 tablespoon honey, and remaining 1 tablespoon flour.
- In the center of the flour, make a well and pour in yeast, honey, and flour mixture. Add remaining 1 3/4 cups water. Mix with a spatula until batter is loose and sticky. If batter is not loose, add more water to achieve it. Cover with plastic wrap and leave to rise for a couple of hours.
- Heat a pot filled about half full of the vegetable oil to 375u0b0F (180u0b0C).
- Shape loukoumades by oiling hands, taking a handful of batter and clenching your fist around it. Now squeeze out a knob of the batter between the fingers and drop it into the hot oil. Repeat with all the remaining batter.
- When the balls rise to the top, they are ready. Remove them with a slotted spoon and dry on paper towels.
- Drizzle with some honey. Top with cinnamon and walnuts.
