Mexicalli Casserole
- 1 lb. ground beef or chuck
- 12 oz. Monterey Jack, grated
- 1 can tomatoes or 2 or 3 fresh tomatoes
- 1 can beans (kidney, pinto, or chili)
- 1 can tomato sauce or Snap-E-Tom
- 1 (4 oz.) can green chilies
- 1 diced onion
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. cumin
- 1/2 tsp. chili powder
- 1/2 tsp. garlic powder
- 1/2 tsp. oregano
- Dorito chips
- Saute onion and brown meat; add spices, tomato ingredients and chilies.
- Add beans and simmer 20-30 minutes.
- In large baking dish place a layer of chips, then a layer of meat sauce, and then a layer of grated cheese.
- Repeat layers.
- Bake at 350u0b0 until cheese bubbles; then add sour cream by dropping tablespoons around dish.
- Bake another 5-10 minutes.
- Serve with warm tortillas and salad. When adding the spices you may add more to suit your taste.
