Chocolate Pears
- 10 whole Small Pears
- 1 cup Red Wine
- 1 teaspoon Cinnamon
- 1 Tablespoon Fresh Lemon Zest
- 2 Tablespoons Sugar
- 16 ounces, weight Chocolate
- 4 ounces, fluid Heavy Whipping Cream
- Peel the pears, remove center core and level each pear so that you can place them on a tray.
- In a big pot, add the wine, cinnamon, lemon zest and sugar. Cook over low heat for a few minutes until it starts boiling.
- Add the pears, making sure they are all standing up straight in the pot. Cook for 25 minutes or until pears are tender. Drain and let them cool on a tray.
- Continue to cook the rest of the liquid from the pears in high heat until you end up with about 4 tablespoonfuls.
- Melt chocolate with cream and add the liquid from the pears.
- Coat each pear with chocolate. Let it stand for 10 minutes and serve!
