Nopalitos Con Camarone (Cactus With Shrimp)
- 1 jar (30 Oz. Jar) Nopalitos En Escabeche (Cactus Strips In Vinegar) Found In The Hispanic Section Of Your Supermarket Or Local Hispanic Market-I Use Embassa Brand
- 3 whole Large Italian Or Plumb Tomatoes
- 1 whole White Onion
- 1-1/2 cup Small Fresh Salad Shrimp
- 1/4 cups Chopped Fresh Cilantro
- 1/4 cups Fresh Squeezed Lime Juice
- 1/4 cups Feta Or Similar Cheese
- The cactus is slippery like okra. Drain and rinse cactus strips thoroughly under cold water until they are not slippery, then chop to a 1/4-inch dice. Rinse and drain again and place in a bowl.
- Remove seeds from tomatoes and dice. Dice onion. Rinse shrimp, drain and check for shell pieces. Add fresh cilantro and lime juice. Add salt to taste and toss. Sprinkle with crumbled cheese.
