Tortellini Soup
- 1 package (1 Pound Package) Kielbasa
- 2 Tablespoons Olive Oil
- 1 whole Onion
- 1 stalk Celery Finely Chopped
- 3 cloves Garlic, Minced
- 1 teaspoon Basil, Dried
- 1/2 teaspoons Salt
- 3 cups Chopped Spinach
- 6 cups Chicken Broth
- 1 package (16 Oz. Package) Fresh Cheese Tortillini
- 1 cup Chickpeas (canned)
- 1 Tablespoon Tomato Paste
- Ground Black Pepper
- Parmesan Cheese
- 1. Brown kielbasa and set aside.
- 2. Heat olive oil in a large saucepan or Dutch oven over medium-low heat. Add onion, celery, garlic, basil and salt. Cook for about 5 minutes, stirring frequently.
- 3. Add spinach and continue cooking until greens are wilted.
- 4. Add broth and bring to a boil. Add tortellini, chickpeas, tomato paste and pepper. Return soup to a boil. Reduce heat to medium-low and simmer. Add kielbasa. Simmer for 8 minutes.
- 5. Garnish each serving with shaved or shredded Parmesan cheese.
