Tortellini Veggie Salad
- 1 package (16 Oz. Package) Frozen Cheese Tortellini
- 2 cups Broccoli Cut Small
- 2 cups Diced Tomatoes
- 2 stalks Celery, Sliced
- 3 sprigs Green Onion, Sliced
- 1 can (2 1/4 Oz. Can) Sliced Olives
- 1 cup Shredded Cheddar Cheese
- 1 cup Shredded Monterey Jack Cheese
- 3/4 cups Mayonnaise
- 3 Tablespoons Grated Parmesan Cheese
- 2 Tablespoons Lemon Juice
- 4 Tablespoons Heavy Whipping Cream
- 1 teaspoon Dried Thyme
- Cook tortellini according to package directions, drain and rinse in cold water. In a large glass salad bowl, layer tortellini, broccoli, tomatoes, celery, green onions, olives and cheese.
- To make the dressing, combing in a small bowl the mayo, parmesan cheese, lemon juice, whipping cream and thyme; mix together well. Cover and refrigerate until serving.
