Tortilla-Less Egg White Breakfast Burrito
- 1 Tablespoon Olive Oil
- 6 leaves Italian Basil
- 3/4 cups Liquid Egg Whites
- 3 slices Smoked Turkey (deli Style)
- 1/3 cups Shredded Mozzarella Cheese
- Freshly Ground Pepper, to taste
- Salt To Taste
- 1. Heat olive oil in a small non-stick pan over medium heat.
- 2. Spread basil leaves flat and evenly over the pan, and fry gently for 30 seconds until fragrant.
- 3. Slowly pour in liquid egg white (optional to add salt to the egg white, but I found the smoked turkey and cheese to be salty enough on their own).
- 4. Let the egg set until nearly opaque all the way through.
- 5. Lay slices of turkey flat on top of the egg, then top with cheese.
- 6. Once the turkey and cheese are heated, use a spatula to gently roll the egg up like a burrito.
- 7. Top with ground pepper and serve warm.
