Strawberry Spinach Salad With Poppy Seed Dressing
- FOR THE SALAD:
- 1 cup Pine Nuts Or Cashews
- 4 cups Spring Mix Lettuces
- 4 cups Baby Spinach
- 1/2 cups Fresh Basil, Chiffonade
- 1/2 cups Red Onion, Sliced
- 1/2 cups Yellow Bell Pepper, Chopped
- 1-1/2 cup Strawberries, Sliced

- FOR THE DRESSING:
- 1/2 cups Mayonnaise
- 1/2 cups Pure Maple Syrup
- 1 Tablespoon Finely Minced Garlic
- 1 Tablespoon Poppy Seeds
- 2 Tablespoons Dijon Mustard
- Step 1: Toast the pine nuts or cashews in a dry frying pan over medium heat for roughly 5 minutes. Remove from heat.
- Step 2: To make the dressing, whisk together the mayo and maple syrup. Whisk in the garlic, poppy seeds and Dijon mustard.
- Step 3: To make the salad, in a large bowl mix together the spring mix lettuces, baby spinach and slivered basil. Add the red onion slices, bell pepper and sliced strawberries. Add the cooled pine or cashew nuts.
- Serve topped with poppy seed dressing.
