Poached Fish Dinner With Mustard-Dill Sauce
- 4 medium size, thin-skinned, boiling potatoes, cut in 1/4-inch slices (about 3 c.)
- 2 medium carrots, cut into 1/4-inch rounds (about 1 c.)
- 2 medium zucchini, cut into 1/4-inch rounds (about 2 c.)
- 3 c. water
- 3 Tbsp. lemon juice
- 1-inch strip lemon peel
- 2 slices onion
- 4 sprigs parsley
- 1 bay leaf
- 3/4 lb. halibut or salmon fillets (1-inch thick)
- 1 c. Mustard-Dill Sauce (see recipe)
- Steam potatoes and carrots for 15 minutes.
- Add zucchini and steam for additional 10 minutes or until desired texture is reached.
- Bring poaching ingredients (water, lemon juice, lemon peel, onion, parsley and bay leaf) to a boil in a broad, shallow pan or skillet.
- Simmer 5 to 10 minutes to extract flavor from seasoning.
- Add fish; simmer, partially covered, 10 minutes, or until fish flakes with a fork.
